Zdeněk Vykoukal
Zdeněk is a die-hard heavy metal fan (he even plays guitar in a local band), but his wines are more like a classic symphony: elegant, intricate, and full of beautiful details.
His vines thrive on the unique limestone soils of Austerlitz, Czech Republic, a small town famous for the formidable Napoleonic battle fought there in 1805.

Textural, rich in flavour and body, layered, distinctly mineral, well-built: Zdeněk’s wines are our go-to when we want to treat ourselves, indulge in a bit of wine meditation, or find a nuanced wine for pairings.
The wines have a distinct mineral character and a pleasant hint of bitterness in the aftertaste that highlights the typicity of their terroir—limestone bedrock rich in marine fossils, topped with magnesium-rich loess soil.
Zdeněk owns just 1.5 hectares across several tiny plots he has acquired over the years from small winemakers and replanted with the help of his family. He began making wine as a hobby in 1996, starting at his parents’ home and following in the footsteps of his father and grandfather, who also tended hobby vineyards—making wine for personal enjoyment is truly a part of Moravian culture!
After marrying his wife in 2001 and moving near Austerlitz, he wanted to continue his passion and started to buy neglected vineyards there—a challenging endeavour, as Brno, Czechia’s second-largest city, is nearby, making land in the area quite coveted and pricey.
He works organically, with both the vineyards and the cellar fully certified. Much of the vineyard work is done by hand, as the steep terrain and narrow rows make using a tractor impractical or impossible. Luck has it that all his neighbours are organic or not treating at all. In the cellar, the wines ferment spontaneously and age for about a year in old barrels of various sizes.
Fun facts
Another of Zdeněk’s big passions is guitar, he even used to play in a local heavy metal band.
“I let my wife choose for me back then: wine or music? She said wine, but now she sometimes jokes that the band might have been the better option since we only played on weekends, while wine takes up all my free time,” he laughs.

Zdeněk is a trained winemaker — he studied at the local wine university while already raising two sons, no small feat. But his full-time job is actually as a train dispatcher at a nearby station!
In addition to all this, he is also an avid dog breeder and competes in dog shows with his two Cocker Spaniels.
