How the wine is made

The grapes are harvested by hand, then destemmed, pressed, with some berries (10% of the volume) left whole to macerate in the juice for 1 month. The fermentation is spontaneous, both primary and malolactic. The wine is aged for 24 months on fine lees in large 1000L Czech oak and 500L Stockinger oak barrels, no regular bâttonnage. No filtration, no fining, small addition of SO2 at bottling (total SO2 40mg/l).
