Martin Vajčner: Tethys 2022

So what's Tethys? It's a prehistoric ocean that used to cover the land of the Znojmo sub-region, where Martin's vines grow. And the marine sediments hide many secrets... This is an orange dry wine. A blend of Pinot Blanc, Pinot Gris and Grüner Veltliner. Fermented and matured in a combination of Austrian oak and clay amphorae. Aromas of grapefruit, black tea, dried herbs and propolis. Goes great with soft cheeses. Spontaneous fermentation. Unfined and unfiltered. No added sulphites. Benefits from decanting to open up and start sharing its marine secrets. Serve slightly chilled.
