Palašák is a a blend of Pálava & Welschriesling (in Czech called "Vlašák"), that's why this strange sounding name. These two grape varieties have a strong tradition in Czechia but fell out of favour with conventional or industrial wine because of their aromatic nature and the tendency for a while for people to make demi-sec or even sweet wines with them.
Palašák is a natural "return to the roots".
Pálava brings a beautiful aroma, Welschriesling pleasant acidity and crunch. 14 days must fermentation with a few selected uncrushed grapes, followed by 4 weeks skin-contact and 10 months aging in an acacia-oak barrel.
This is an approachable orange wine that will not scare your parents but will, at the same time, please even the most demanding palates. Best enjoyed chilled with a liver pâté, caramelized-onion Bruschetta or any lighter seasonal salads (think feta, figues, walnuts, fresh spinach).
