How the wine is made

The grapes are harvested by hand, then destemmed, pressed, with some berries (10% of the volume) left whole to macerate in the juice for 1 month. The fermentation is spontaneous, both primary and malolactic. The wine is aged for 12 months on fine lees in large 1000L Czech oak barrel, no regular bâttonnage. No filtration, no fining, small addition of SO2 at bottling (total SO2 44mg/l).

BB stands for Bílovické Burgundské, or "Bílovice Burgundy" and is named after the town of Velké Bílovice where Jaroslav Osička has his vineyards and cellar. You can also find its name in the word search on the label while drinking it!
